It's hard to believe I'm only sharing this recipe for the first time now!! I've been making this delicious rhubarb barbecue sauce for the past few years, and it's one of my favorite rhubarb recipes.
This barbecue sauce is soooo good warmed on top of grilled porkchops or chicken pieces, or baked in the oven with meatballs and served with brown rice spaghetti (my fave!). It's easily doubled or tripled. Would work great for canning!
4 cups fresh rhubarb, diced
1/4 cup honey
3 Tbsp water
1 Tbsp molasses
1/2 tsp sea salt
1/4 tsp ground sage
1/4 tsp ground ginger
1/8 tsp black pepper
Place all ingredients in a medium-sized sauce pan and bring to a simmer over medium-high heat, stirring occasionally. Reduce heat to medium-low and cook until the rhubarb pieces become very soft and break apart, and sauce thickens to desired consistency, stirring frequently.
Optional: Blend with a hand blender for a smoother sauce - I don't usually do this.
