Green Olive Tapenade

Going off eggs is definitely making me more creative with my recipes. I've been on the lookout for some new ways to eat fish and this one's a keeper!
I looooove olives. I've been on an olive kick for a few months now - ever since I came across Co-op's PURE Green Olives stuffed with Citrus. Finally some olives I can find locally without any weird additives.
This is a really simple recipe - the food processor does all the work and the tapenade packs a big flavor punch! It's a great pair for a mild fish like trout or chicken. I really enjoy it with cauli-rice, roasted veggies and fresh herbs. Feel free to add garlic if you tolerate it - that would be delicious!

Ingredients:
1/2 cup green olives (I used Co-op's PURE Green Olives stuffed with Citrus)
3 Tbsp capers (I used Amphora Organic Capers)
3 Tbsp olive oil
Juice of 1 lemon
Pinch of salt
Directions:
Combine all ingredients in a food processor and process until finely chopped. Enjoy!
Ways to use your Green Olive Tapenade:
Tonight I put mine on top of fried trout and served it with cauli-rice and fresh basil and cilantro.
Try it on top of grilled chicken and veggies!
Mix it with homemade mayo to use as an aioli or dip.
Thin it out with more olive oil and lemon juice to use as a salad dressing.
Mix it in a homemade hummus.
